How to make Fresh Spring Roll
Fresh Spring Roll (Por Pia Sod) needs no frying, just a gentle roll and a happy dunk. Built right at the table, it’s perfect for chatty dinners and picnics. Mix and match your favorite crisp veggies and herbs, roll tight, dip, smile and share the fun.
Ingredients
- 1 rice paper wrapped
- 2 medium shrimp: cooked, peeled, sliced in half lengthwise (or protein of choice)(tofu or avocado for vegetarian)
- A few thin cucumber sticks (2–3 pieces)
- A few carrot sticks (2–3 pieces)
- 1 lettuce leaf: torn to size
- A few of bell pepper
- A few fresh herb leaves (Papermint, coriander or sweet basil)
Instructions
- In a mortar and pestle, lightly pound the garlic and chili until crushed.
- Add green beans, bruise lightly.
- Add tomatoes, pound gently to release juice.
- Mix in sugar, fish sauce, tamarind juice and lime juice until dissolved.
- Add shredded papaya (and carrot, if using). Toss and mix well with a spoon and pestle.
- Taste – adjust sour/salt/sweet balance.
- Top with roasted peanuts.
